6-8 boneless/skinless chicken breasts
1 pkg turkey bacon
1 lg can Low Fat Cream of Chicken soup
1 1/2 cups light sour cream
1 tsp curry pwd

"Yellow Rice"
1 cup uncooked rice
1/2 cube butter
2 chicken bullion cubes
1 pkg dry noodle soup mix
2 1/2 cups water

Wrap each breast in bacon and place in 9x13 casserole dish. Mix soup, sour cream, and curry pwd and pour over the chicken. Bake covered 375º 1-1 1/2 hours. "Yellow Rice": melt butter in pan on stove; add bullion cubes, rice and dry soup mix; brown lightly and place in 9x13 dish; add 2 1/2 cups water and cook covered at 350º for 45 mins (until all water in soaked in). I just throw it in with the chicken after the chicken has been in for 45 mins. and turn the oven down to 350º.

This was a family favorite of JD's while he was growing up. The family that gave them the recipe was the Bradshaws, so they always called the rice dish "Bradshaw Rice". Since our kids don't know the Bradshaws, and since the rice turns yellow from the bullion, our boys call it "yellow rice". It's one of our family favorites as well.
