4 cups Pecans (about 1 lb)
1 1/2 cups Sugar
1/2 cup Water
1 tsp. Cinnamon

Directions:
Spread nuts in a single layer in pan. Bake in preheated 325º oven for 20 minutes or until lightly toasted. Cool in pan or on a baker's rack. In heavy 2 qt. saucepan bring to boil sugar and water. Simmer uncovered until softball stage (240º on candy themometer) or until 1/2 tsp. syrup dropped in ice water forms soft ball. Remove from heat. Stir in cinnamon, then toasted nuts to coat well. Immediately turn out on waxed paper and separate. Cool Completely. Store in an airtight container and in a cool place.
Makes 4 cups.
