1 quart beef bouillon or brown stock
3 cups thinly sliced yellow onions
3 Tbl butter
1 teas salt
1 Tbl sugar
2 Tbl flour
¼ cup dry vermouth or cognac (John used vermouth when he made this soup)
1 cup grated Parmesan cheese
French bread

Directions:
Directions:
Pour broth into Crock-pot. Cook onions slowly in large skillet in the butter. Cover and let cook for about 15 minutes. Uncover and add salt, sugar, flour and vermouth. Stir well. Add to stock in crock-pot. Cover and cook on low 6 to 8 hours (on high – 3 hours). Before serving, lay a slice of French bread on top of bowl of soup, and top with grated cheese and set under the broiler until cheese melts. Serve with more French bread.
