small red potatoes
2 T. olive oil
2 T. grated parmesan cheese
1/4 tsp. garlic powder
1/8 tsp. paprika
1/8 tsp. salt
3 T. finely chopped parsley

Directions:
Directions:
In a saucepan cover potatoes with water and bring to a boil. Boil for 15 minutes or just until they are fork tender.
Drain potatoes and place on baking sheet covered with foil. Press potatoes gently with a paper towel until flat, trying not to break potatoes (slight cracks are normal). Brush with 1 T. olive oil.
Combine cheese, garlic powder, paprika and salt in small bowl. Sprinkle half of mixture over top of potatoes. Bake for 15 minutes at 400º.
Turn potatoes over and brush with remaining olive oil, then sprinkle with remaining cheese mixture. Bake another 15 minutes and garnish with parsley.
