4 c prepared brown rice
2 T extra virgin olive oil
1-2 carrots sliced
1-2 stalks celery sliced
1-2 red & green pepper (1-2 total) chopped
1/2 - 1 c pre-cooked green beans
1 medium onion strips
1-2 c zucchini chunks
1-2 c tomato wedges or halves (if cherry tomatoes)
garlic spread seasoning or minced garlic
other favorite compatible seasonings

Optional: Cooked chicken, pork/ham, beef or venison chunks or strips, shrimp or salmon make good additions.

Spread olive oil across bottom of pan (sides, too, if you have a wok) and heat. Add sliced or chunked veggies in order, heating through with each addition. Add tomatoes last until combined vegetables are all heated, tender but still slightly firm. Cover warm rice with cooked veggies on individual serving plates and add favorite seasoning(s) to taste—e.g. light soy sauce, Braggs amino, Costco gourmet sauce, or compatible salad toppings.
*Vegetable quantities are approximate. Use more or less of each depending on what you have on hand and what you like or dislike. If peas are on but not beans, for example, we shuck, precook, and add them—at least those we don’t eat right off the vine pod and all! ** The veggies can also be prepared using no oil by microwaving in order in a single bowl with very little water in the bottom.
