1&1/2 c. Wesson oil
2 c. sugar
4 egg yolks
4 tbsp. water
1&1/2 c. finely grated carrots
2&1/2 c. self rising flour
2 tsp. cinnamon
2/3 c. pecans (chopped)
4 stiffly beaten egg whites

Frosting:
1 lg. can pet milk
3 egg yolks
1 c. sugar
1 stick margarine
1 tsp. vanilla
1 c. chopped pecans
1 can coconut

Directions:
Directions:
Mix all wet ingredients together. Incorporate dry ingredients a little at a time until batter is mixed. Bake at 350º until done (approx. 35 minutes)

For frosting mix milk, butter, egg yolks and sugar. Cook until thick over low heat. Let cool. Add vanilla, coconut and nuts and spread over cake.
