1/2 c. shortening
1 c. sugar
2 eggs or 3 egg whites
1 c. mashed bananas
3 tbsp yogurt
1 tbsp lemon juice
2 c. flour
1 1/2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
Optional: 1 c. pecans

Directions:
Directions:
Beat shortening and sugar until smooth. Add and beat together eggs, bananas, yogurt, and lemon juice. Mix flour, baking powder, salt, and baking soda. Fold into wet mixture. Optional: stir in pecans.
Bake at 325º for 1 hour or until toothpick inserted in middle comes out clean. Cool in pan for 10 minutes and invert onto cooling rack
