½ pound large scallops
¼ cup plain bread crumbs
1 tsp. margarine or butter
¼ cup white wine
2 tbl. Grated Parmesan cheese
Salt and freshly ground pepper
¼ cup chopped fresh parsley

Directions:
Directions:
Preheat oven to 350 degrees. Rinse scallops and place in a small baking dish just large enough to hold them in one layer. Sprinkle with breadcrumbs, and toss to coat. Cut margarine into bits and divide among the scallops. Add wine to baking dish and bake for 15 minutes.

Remove from oven and turn on broiler. Sprinkle scallops with Parmesan cheese and place under broiler for 5 – 10 seconds. Watch carefully – they will brown quickly. Season with salt and pepper to taste. Serve on a bed of spinach Linguine and sprinkle parsley on top.
