1 large loaf of Cuban bread
1 lb smoked sweet ham, thinly sliced
1 lb roast white pork, thinly sliced
1/2 lb salami (Genoa), thinly sliced
1/2 lb Swiss cheese, sliced and juliennes
10-12 pickle slices
lettuce and sliced ripe tomatoes (optional)
mustard, mayo, and butter

Cut bread into quarters about a foot long each and Slice lengthwise. Spread both sides of bread with mustard and mayo to taste. Layer ham, pork and salami on one side of bread. Add strips of cheese, pickles, lettuce and tomato and close sandwich. Lightly spread butter on outside of bread. Press on a lo heat griddle (a flat frypan and a heavy plate works ok too, you just have to turn the sandwich once) until bread is light brown and crispy.

Bop Bop (grandpa Govin) used to take me into Ybor city for lunch and we would go to the Silver Ring or the Tropicana for hot Cubans and his espresso. There is only 1 right way to do a "real" Cuban Sandwich. Use authentic style Cuban bread, a good smoked roast pork and don't ever be stingy with the meat! Cut foot longs into 3 inch pieces for Football gatherings and casual get togethers. Enjoy!
