7 baked potatoes
1 teaspoon salt
1 cup cottage cheese
1 cup sour cream
2 chopped scallions
1 cup shredded cheese (colbey, cheddar or monteray jack) reserve 1/4 cup for topping

Directions:
Directions:
Slice the potatoes in half lengthwise. Gently scoop out pulp and place in food processor or mixing bowl.
To pulp of six baked potatoes add the remaining ingredients, reserving some cheese for topping. Mix well. Place mixture back into potato skins and top with remaining cheese.

At this point, you may bake or freese for future.

Bake at 400 until top is slightly brown. If frozen, be sure that center is heated through.
