1 1/4 c. flour
1/2 c. cornstarch
1/3 c. powdered sugar
3/4 c.softened butter
1 t. grated lemon peel
1 T. lemon juice

3/4 c. powdered sugar
1/4 c. softened butter
1 t. lemon peel
1 t. lemon juice

Combine cookie ingredients & beat in mixer @ low speed, scraping bowl often, until well mixed.
( 2- 3 min.)
Divide dough in half& shape into an 8x1" roll.
Wrap in plastic wrap & refrigerate until firm.
( 1-2 hrs.)
Preheat oven to 350.
Cut rolls into 1/4' slices.
Bake for 8 -12 min.
* Note: cookies do not brown.

Combine frosting ingredients& beat @ med. speed until fluffy (1-2 min.)
