2.5 lb. red potatoes
1 c. cream, half & half, or milnot
I large onion
6 large cloves of garlic
1-2 tsp. salt or to taste
Freshly grated black pepper to taste.
1 tsp. baking powder
1 c. flour or enough to make a thicker batter.
Lard, shortening or olive oil for frying.

Directions:
Directions:
Peel and grate potatoes, onion, and garlic. Add salt and pepper. Add cream, eggs, flour and baking powder and mix very well. You may have to add more flour until you have a batter of nice consistency that is not too thick or watery.

Drop pancake batter by the ladle into a large frying pan of hot shortening and fry on one side until a moderate golden brown and turn and fry the other side until a moderate golden brown. Drain on paper towel and keep warm on a covered platter until ready to serve.

Serve with sour cream and/or applesauce. I love them with applesauce while my other family members love them with sour cream.

Serves 4. This is a great meal to serve on Ash Wednesday and Fridays of Holy Lent.
