1 1/3 lbs. ground turkey
6 crimini mushrooms stems removed (baby portabella) finely chopped
1/2 red bell pepper chopped
1/2 yellow onion chopped
2 garlic cloves chopped
3 tbsps. tomato paste
Chopped parsley
1 tbsp. worcestershire sauce
1 tsp. crushed red pepper flakes
1/2 cup grated Parmesan cheese
Extra virgin olive oil
4 large portobella mushroom caps, coarse salt and pepper
1/2 lb. fresh Mozzarella
2 cups arugula, chopped
Sliced yellow or red onion
Sliced tomato

Preheat oven 450 degrees.

Combine meat and all ingredients (up to extra virgin olive oil). Form 4 large burgers. Drizzle with olive oil and fry each for 5-6 minutes on both sides.

Drizzle Portobella Caps with olive oil, salt & pepper. Roast caps for 12 minutes.

Cap burgers with sliced Mozzarella and place them on the "buns". Place back in oven until cheese is melted.

Top burgers with arugala, tomato, and sliced onion (if desired).
