1 tsp. extra virgin olive oil
2 cups chopped red bell peppers
1 cup chopped onion
2 (14 oz.) cans diced tomatoes (I usually use the basil & garlic)
2 tbsps. balsamic vinegar
1/4 tsp. black pepper
2 garlic cloves
1/4 cup flour
1/4 cup grated Parmesan cheese
1/4 tsp. black pepper
4 skinless chicken breast
1 large egg white
1 cup shredded Mozzarella

Directions:
Directions:
Preheat oven 350 degrees.

Flatten chicken breast to 1/4 inch. Combine flour, Parmesan, and pepper in shallow dish. Dip each breast in egg white, dredge in flour mixture. Heat 1 tbsp. extra virgin olive oil over medium-high heat. Add chicken, cook 5 minutes on each side. Arrange chicken in 13X9 pan coated in cooking spray.

While chicken is cooking, Heat oil in large saucepan, add red peppers and onions. Saute for 7 minutes. Stir in canned tomatoes, bring to a boil and remove from heat. Stir in vinegar, pepper and garlic.

Pour tomato sauce mixture over chicken. Sprinkle with Mozzarella. Bake for 15 minutes. Serve over pasta.
