8 oz Elbow Macaroni
1 (6oz) package deli thin-sliced ham, chopped
1/2 cup Yellow Pepper, diced
1/2 cup Red Pepper, diced
1 cup peeled, seeded, and chopped tomatoes
1 Tbsp plus 1 1/2 tsp minced cilantro
1/4 cup diced Red Onion
1 clove garlic, minced
1 Tbsp Olive Oil
1 Tbsp Red Wine Vinegar
1 small Jalapeņo Pepper, seeded and minced
1/4 cup crumbled Feta Cheese
2 Tbsp pine nuts, roasted

Directions:

Cook the macaroni according to package directions. Drain and set aside. Combine the ham and next nine ingredients (through vinegar) in a large bowl. Stir in the macaroni. Cover and chill at least 2 hours. Top with the cheese and pine nuts just before serving.
