1 (29oz.) can sweet potatoes or 4 c. cooked potatoes
1/2 c. sugar
1/2 c. evaporated milk (undiluted)
1 tsp. vanilla
2 eggs
1/2 c. butter

Topping:
1/2 c. light brown sugar
1/4 c. butter
1/4 c. flour
1/4 c. chopped pecans

Directions:
Directions:
Pudding: Drain mashed potatoes (medium speed on mixer). Mix with sugar, evaporated milk, vanilla, eggs, and butter. Spread in buttered 1 1/2 or 2 qt. pan (8x8 in. or 9x9 in. square pan).
Topping: Mix ingredients (except nuts) until crumbly. Add nuts. Sprinkle over potato mixture.
Bake at 350 degrees in preheated oven until melted and bubbly, about 30 minutes.
