1 POUND BONELESS HADDOCK FILLET
2 POUNDS FRESH SCALLOPS
1 POUND SHRIMP – LARGE
1 POUND LOBSTER MEAT
1/8 CUP FINELY MINCED ONION
1/4CUP FINELY MINCED GREEN PEPPER
½ TEASPOON LOWERY’S SALT
½ TEASPOON WORCESTERSHIRE SAUCE
DASH PEPPER
1 TEASPOON ACCENT
½ TEASPOON PAPRIKA
1 PINT LIGHT CREAM
½ CUP BUTTER
1 CUP SLICED GREEN OLIVES
3/4 CUPS FLOUR
(SET ASIDE A LOBSTER CLAW AND A LARGE SHRIMP TO TOP CASSEROLE)

Using a large pot filled with 5 cups of lightly salted water, “poach” fish gently until just barely cooked. (Do each variety separately). Set aside in a large deep bowl and cover to keep moist. Strain cooking stock into a heavy 5 quart pot and add onion, green pepper, salt, pepper, Worcestershire sauce, paprika, and Accent. Simmer 5 minutes. Then add ½ cup butter. When melted add light cream. When just to the scalding point, add a smooth, running paste of ¾ cup flour and cold water. Cook until smooth and thick. Add more flour and milk as necessary. In the pot that you have set aside, gently mix fish to evenly distribute varieties. Then pour hot sauce over fish and allow to settle for one hour. Use two 2 ½ quart casserole dishes. Butter them heavily and coat well with fine bread crumbs. Gently pour fish mixture into casseroles one inch from top. Decorate with lobster claw and shrimp. Top with well seasoned crumbs lightly browned in butter. Bake in a 325 degree oven for about 30 minutes or until hot and bubbly. It can be served on patty shells, with frozen green peas and small onions.
