Veloute Sauce


Ingredients:

2 T butter
3 T flour
1/4 tsp salt
1/2 cup chicken Stock
1/2 cup white wine
1/3 cup cream
(Part 2)

Directions:
Directions:
Melt butter, add flour salt and pepper, blend well
Slowly add stiring constantly the chicken stock and wine. Then bring to a boil for 2 minutes and add the cream. Makes about 1 cup.

1-1/2 cup veloute sauce
1 cup cubed cooked chicken
1/2 cup sliced sauteed mushrooms
1/4 cup canned pimentos, cut in strips
Puff pastry patty shells

To the sauce add chicken, mushrooms, and pimentos. Heat to serving temp. Serve on patty shells or toast.

I found this in Gram Helen's recipe box. I used to serve this at my after New Year's Christmas party.... My note to Gram was... I cooked up the chicken and decided how much sauce to make. I then stretched the sauce with milk and wine. It was very tasty!
