6 Beets
2 green peppers
1/2 cup celery
1/4 tsp salt
1/4 tsp pepper
2 tbsp. onion
Lettuce
French dressing
Directions:
Directions:
Coook beets, hollow out center. Fill with french dressing. Cut peppers, celery and onion fine. Drain dressing from beet cups and add to chopped vegetable mix.
Serve on lettuce

I would chop the beet centers and add to the other vegies, and refill the centers with the mix.
