1 cup plus 2 tablespoons sugar
2 packages unflavored gelatin
1/8 teaspoon salt
4 eggs, divided
2 cups milk
12 oz. frozen orange juice
2 tablespoons vanilla extract
1 cup heavy cream
Package of lady fingers

Directions:
Directions:
In top of double boiler, mix cup of sugar, gelatin salt. In small bowl, beat egg yolks until light, stir in milk and add to sugar mixture. Cook over boiling water, stirring constantly until gelatin dissolves, about 10 minutes. Remove from heat. Stir in frozen orange juice, add vanilla. Chill until mixture is thick as unbeaten egg white.
Beat the egg whites until soft peaks form. Gradually beat in remaining 2 tablespoons sugar and fold into orange mix. Fold in ½ cup whipped heavy cream. Spoon 1/3 of the mixture into serving dish. Stand a few lady fingers around edge of dish and arrange a few over top. Repeat layering orange mixture and lady fingers, ending with orange. Chill until firm. Garnish with remaining ½ cup of whipped cream.
