1 lb ricotta
1 lb cream cheese
1 1/2 cups sugar
4 eggs, slightly beaten
3 Tbsp cornstarch
3 Tbsp flour
1/4 lb butter and melted and cooled
1 Tbps plus 1 tsp vanilla
1 Tbsp lemon juice
1 Pint sour cream

Directions:

Beat ricotta medium-speed, add cream cheese, 1/2 lb at a time, alternation with sugar (mix cheeses thoroughly, constant beating by mixer).
Add vanilla and lemon juice to the lightly beaten eggs, and then add this slowly to cheese mixture while beating.
Blend flour and cornstarch and slowly add to cheese mixture while beating. Add melted butter. Mix. Add sour cream slowly.
Butter cheese cake pan (a spring form with removable sides and bottom), for cheese cake use about a 10 inch size. This should be prepared before you make the cheese mixture.
Pour in mixture. Bake at 350º for an hour and ten minutes, till golden brown. Test with a toothpick to make sure the toothpick does not come out moist or wet. Leave the cake in the oven to cool. Remove sides and refrigerate.
