Ingredients:  
Fresh Clean Dandy Lion Greens, torn into pieces. Remove any of the flower bud when you tear up the greens.
1/4 cup chopped green onion

Dressing
4 slices of Bacon
1/4 cup vinegar
2 Tbl Water
2 Tbl Sugar
1/2 teas salt and dash of pepper
1/4 cup Green Onions

Directions:
Directions:
Place greens into a bowl with 1/4 cup of the green onions on top
Fry bacon until crisp. Remove from pan and drain on paper towel, saving fat. Combine the vinegar, water, sugar, salt and pepper. Mix well. Add 1/4 cup chopped green onions including tops and the vinegar mix to the hot pan with the bacon fat. Bring to boil.

Pour hot dressing over the top of the greens and crumble the bacon on top. Toss and serve while hot.

This was a favorite salad in the early spring when I was a kid. I have made it many times since. Make sure if you are picking dandy lions in the yard, that you are doing it where no one has sprayed. We enjoy taking a ride into the hills and picking dandy lions up there. We know no one has sprayed there, and the dandy lions will be clean. If you can't find good greens, you can use endive from the store or farmers market. But nothing tastes better then the dandy lions. And the best part is they are very good for you, not to mention you will help your yard look better if you remove them early before they go to bloom!
I made this one time for Michaels friends from college when they came for Easter break. They hesitated, tried a bite, then dug in. The next day we got more dandy lions dug out of the front yard. (Great way to get free yard work done;-).
