2 2/3 c. sweetened flake coconut, packed firmly
2/3 c. sugar
1/4 c. flour
4 egg whites, unbeaten
1 c. sliced almonds
1 tsp. vanilla
1 tsp. almond extract

8 oz. semi-sweet chocolate (chips are the easiest)

Preheat oven to 325º. Combine coconut, sugar and flour. Stir in egg whites, almonds, vanilla and almond extracts. Form balls from rounded tablespoons and place 2 inches apart on a lightly greased cookie sheet. Bake 20-25 minutes until golden. Let cookies cool.

Melt chocolate in microwave until smooth. Dip one edge of macaroon in chocolate and set on wax paper until hardened or set.

Patti gave me a great Christmas cookbook. This recipe was in it. Some of my baking recipes call for just egg yolks and then I am left with the whites. This recipe solves that problem.
