5-1/2 pounds red new potatoes
2 or 3 gloves garlic, finely minced
1-1/2 cups extra virgin olive oil
1 large bunch fresh mint, finely chopped
2 tbsps. course salt
Freshly ground black pepper, to taste

Directions:
Directions:
Preheat oven to 350º.

Scrub potatoes and prick with fork. Place in shallow roasting pan and roast for 2 hours. Cut each potato in half.

Toss the potatoes with the garlic, oil, mint, salt, and pepper in a large bowl. Let stand for 30 minutes before serving.
