Extra Virgin Olive Oil
Onions, Garlic, Leeks, Swiss or Green Chard
Spinach Leaves, 1 lg can of Chicken Broth (or two)
Green Beans (FRESH!), Zucchini (if you have it)
Everything else in fridge that's dark green and leafy!

Directions:
Saute onions and garlic in olive oil. Next, saute celery (including the leaves) and leeks (both parts). Then, add a large can (or two) of chicken broth. Next, add everything deep green and leafy that you have in your fridge! My favorites are Swiss chard or green chard (just the leafy part), spinach leaves, and green beans (if I have them in non-canned form). Then, add pepper and let it cook until the veggies are soft. I also like to add zucchini if I have it. It taste pretty good for something that healthy!

Cutting the green, leafy stuff takes about 30 minutes, but it cooks quickly.
