3 eggs, beaten
1/2 onion, choped coarse
1 T. GF flour
1 T. sugar
1 tsp. salt
1 1/3 c. half and half
3 T. butter, melted
2 c. fresh corn
1 c. grated jalepano jack cheese (optional)
1/2 lb. breakfast sausage, cooked (optional)
1 cornmeal galette recipe

Directions:
Directions:
Preheat oven to 375º Sautee onion in olive oil until golden or carmelized. Then combine all ingredients in bowl.
Prepare pie pan with galette dough. If using optional spread over dough then pour remaining quiche mixture over. Put foil around crust ring so doesn't burn, then pull off toward the end to brown up.
Bake 50 minutes until golden and puffy.

The edging of GF crusts just falls apart. If you don't need the fancy edging just omit.
