1 Tbsp. oil
1 Lb. ground beef
3/4 Cup chopped onions
1/4 Cup chopped parsley
2 cloves minced garlic
1 green pepper, chopped
2 cans (16 oz) cans tomato sauce
1 can tomato paste
1 Tbsp. sugar
1 Tbsp. oregano
2 tsp. salt
1 tsp. pepper

Filling:
1 15-oz. container ricotta cheese
1 15-oz. container cottage cheese
2 eggs, slightly beaten
1 cup grated parmesan cheese
8 oz. mozzarella cheese
16 oz. pkg. lasagne noodles

Meat Sauce:
In a 6 qt. dutch oven, add oil and brown the ground beef (drain). Add parsley, onions, garlic and green pepper. Add tomato sauce, sugar, oregano, salt and pepper, then add tomato paste. Simmer over medium heat about 45 minutes.

Filling:
In medium bowl, combine ricotta, cottage cheese, eggs, 3/4 cup of parmesan cheese and mix well.

Spread 1 cup of sauce into a 13 x 9 x 2 inch pan. Layer 1/4 of lasagne noodles, 1/3 of the ricotta mixture and 1 cup of meat sauce. Sprinkle with 1/4 mozzarella. Repeat twice. Top with remaining noodles and meat sauce, plus sprinkle with remaining mozzarella and parmesan cheese. Cover with foil. Bake at 375º for 45 to 50 minutes. After 30-35 minutes, remove foil to continue baking. Let stand before serving.
