2 cups chopped onion
2 tablespoons corn oil
3/4 cup red pepper, diced small
1/4 cup green pepper, diced small
2 teaspoons salt
1 tablespoon dry minced garlic
5 cups whole kernel corn, frozen, may also use fresh
2 cups water, from steaming corn
1 tablespoon cumin
1/4 tablespoon ground white pepper
1/2 teaspoon thyme
1/2 teaspoon curry powder

Directions:
Directions:
Saute onions, red pepper, herbs and spices in corn oil (do not saute green pepper; it is added at end to retain color). Steam or boil all 5 cups of corn; set aside 1 cup. When cool, blend 4 cups of corn with 2 cups of water, making creamy consistency. Add to the sauteed vegetables and spices. Add reserved cup or corn and rest of water to obtain desired thickness. Simmer over low heat for 30 minutes. Add green pepper 15 minutes before serving.
