2 pounds ground beef
4 onions, chopped
5 cloves garlic, minced
1 cup celery (with leaves), chopped
1 green pepper, chopped
1 can red kidney beans, 3 lb 5 oz
2 cans tomato sauce or 6 oz tomato paste and 8 oz tomato sauce, 6 oz
2 beef bouillon cubes
1 cup warm water
1 can beer, 12 oz
1 teaspoon Worcestershire sauce
2 tablespoons chili powder
1 tablespoon oregano
1 teaspoon basil
1 teaspoon cumin powder
2 teaspoons salt
freshly ground pepper
1 dash tabasco sauce
1 tablespoon vinegar
1/4 cup catsup

1. Saute together meat, onions, garlic, celery and green pepper until meat is no longer pink. Drain fat. In a large kettle, combine meat mixture with remaining ingredients. Bring to a boil; lower heat and simmer, covered for 2 to 3 hours.

2. Better if made the day before and reheated.
