Cake:
2 cups flour
1 teaspoon salt
1 teaspoon soda
1 1/2 teaspoon cinnamon
1 1/2 teaspoon nutmeg
2 cups sugar
3/4 cup oil
3 eggs
2 cups shredded carrots
1 small can crushed unsweetened pineapple
3/4 box (medium) raisins.

Frosting:
1 8 oz. package cream cheese
1 cube butter
vanilla
3/4 box powdered sugar

Directions:
Directions:
Mix flour, salt, soda, cinnamon and nutmeg together. Set aside. In separate bowl mix sugar, oil, and eggs. Add carrots, pineapple, raisins, and nuts. Add wet and dry ingredients together. Pour into greased and floured 8 X 12 inch pan. Bake at 350º for one hour. Cool. Prepare frosting and spread over top of cooled cake.
