50-60 vine leaves
1 cup olive oil
1 1/2 cup onions, finely chopped
1 cup spring onions, finely chopped
1/2 cup dill, finely chopped
1 cup rice
a good quantity of mint
salt and pepper
1-2 lemons

Directions:
Directions:
Scald the vine leaves, drain and allow to cool. mix all ingredients except lemon and wrap in the leaves forming them into a roll shape. Place someof the leaves on the bottom of the pan, then place the dolmades in outward radiating circles. Evenly space them in a pan close to each other. Put a plate on top of the dolmades. This is to ensure they dont break open during cooking. Add lemon juice and water. Boil slowly until water has been absorbed and the rice is cooked. Leave to cool.
