1 lb. ground Buffalo or Bison
1 small Vidalia or Sweet Onion, finely chopped (about 1/4 cup)
1 tsp. Worcestershire Sauce (more to taste)
1/2 tsp. Salt
1/4 tsp. Black Pepper
1/2 cup shredded, reduced-fat Sharp Cheddar Cheese
4 English Muffins, split
Lettuce
Tomato Slices

Directions:

In a medium bowl, combine the Buffalo, Onion, Worcestershire Sauce, Salt, and Pepper. Mix thoroughly with (clean) fingers.
Divide and shape the mixture into four equal balls. Make a deep indentation into each ball, and fill with 2 Tbsp of the cheese. Pinch the meat closed around your cheese-hole, and shape each ball into a patty.
For best results, grill on a charcoal or gas grill over medium-high heat for 4 minutes per side. Alternately, cook in a skillet sprayed with non-stick spray over medium-high heat 3-4 minutes per side. Meanwhile, toast the English Muffin halves.
Serve the burgers on the english muffins, topped with lettuce and tomato.
