Onion, chopped
4 Tbsp Shortening
4-5 lbs Chicken parts
1 Tbsp Paprika
2 Tbsp Salt
1 1/2 cup Water
1/2 pint Sour Cream

Dumplings:
3 Eggs, beaten
3 cups Flour
1 Tbsp Salt
1/2 cup Water

Directions:
Directions:
In a very large skillet, brown the chopped onion in the shortening, about 5 minutes. Add the Chicken Parts, Paprika and Salt and brown another 10 minutes. Add water, cover, and simmer slowly until tender; about 45 minutes. Remove chicken to glass baking dish to keep warm in oven.
Add Sour Cream to drippings and mix well over low heat for 5-10 minutes until creamy and thickened slightly.

Knuckles (Dumplings):
Mix together the beaten eggs, flour, salt and water with spoon. Drop by teaspoonfuls into pot of boiling, salted water. Cook 10 minutes, drain, and then rinse with cold water. Drain well and warm in oven.

Serve chicken and dumplings together with paprika cream sauce. Great with fresh bread and a simple salad.
