5lbs. Pork Loin (Costco)
Salt, Pepper, Garlic Salt, to taste
29oz. can of Mild Green Chili Enchilada Sauce
1+ Cup Brown Sugar
1 15oz. can Black Beans, lightly drained
3 Cups Rice, cooked
Chicken bouillon cubes

Place pork, fat side up, in Crock-pot. Season and cook on low for 8 hours. Remove from pot and drain. Put back in pot and shred. Mix enchilada sauce and brown sugar (add 1/4c. more if want it sweeter). Pour over pork and mix well. Heat for another hour. Add bouillon cubes to water while cooking rice. Heat beans. Make salad over warm tortilla or make a burrito.
