4 Quarts chopped Tomatoes
4 Large chopped Sweet Onions
4 Cloves fresh finely chopped garlic
1 Green Pepper
1 Yellow, Orange or Purple Pepper
7 chopped Jalapeno peppers (the more seeds the hotter the salsa)
6 teaspoon salt
1 cup White Vinegar

Directions:
Directions:
Simmer 2 to 3 hours in big pan. If salsa is not thick enough, remove 1 cup of salsa and let cool several minutes. Slowly mix in 1 to 2 tablespoon of cornstarch until smooth. Slowly add back into the rest of salsa. Salsa should thicken up shortly.

To can:
Place salsa in warmed jars leaving ½” head. Wipe off the rim of the jar. Put lids &rims. Place in boiling water; bring to boil for 15 minutes. After cool, check jars for seal by pushing the center.

Using purple & orange sweet peppers for additional color and to add a sweeter tast to the salsa.
