1 medium onion, chopped
1 tube Jimmy Dean sausage, sage or spicy
1 medium Butternut squash; peeled, seeded and cubed
1 medium red bell pepper, chopped
2 large potatoes, cubed

Directions:
Directions:
1. Brown onion and sausage in skillet. Drain.
2. Mix onion, sausage, squash, red pepper, and potatoes in casserole dish. Season with salt and pepper.
3. Bake uncovered at 350º for about 45 minutes or until squash and potatoes are cooked through.

This is a great dish to serve on a cool fall day.
