9 ounces crushed pineapple
1 cup quick cooking oats
1/2 cup buttermilk
1/3 cup shortening
1/3 cup brown sugar, packed
1 teaspoon grated orange peel
1 egg
1 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt

1. Mix together pineapple, oats and buttermilk. Let stand 15 minutes.

2. Cream together shortening, brown sugar and orange peel. Add egg and mix well.

3. Sift together flour, baking powder, soda and salt.

4. Add to creamed mixture alternately with oatmeal mixture beginning and ending with flour.

5. Bake at 400 degrees for 25 minutes.
