1 1/2 lbs. ricotta
4 eggs, well beaten
2 tbsps. grated orange and lemon rind
1 cup sugar

Italian Pie Crust:
2 cups flour
1/2 tsp. baking powder
1/2 cup sugar
4 heaping tbsps. Crisco
2 eggs
1/2 tsp. vanilla

Directions:
Directions:
Cream all ingredients together and pour into 9 inch prepared Italian pie crust (recipe below). Bake at 375 degrees for 15 minutes and then at 325 degrees for 30 to 40 minutes. Test with knife inserted into filling. Knife should still come out a little wet when done. Sprinkle with powdered sugar when cool.

Directions for pie crust:
Mix all ingredients to form ball. Roll out and shape into 9 inch pie pan. Enough for 1 top and bottom crust pie or two just bottom crust pies.
