2 pre-cooked or grilled boneless, skinless chicken breasts sliced
1 lb. uncooked fresh or frozen cheese tortellini
2 T. olive oil
1/2 c. chopped onion
3 garlic cloves, minced
1 c. fresh baby spinach
1 c. cubed, seeded tomato
1/4 c. chopped fresh basil
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. crushed red pepper (optional)
1 c. whipping cream
1/4 c. grated Parmesan cheese

Directions:
Directions:
Cook chicken breasts the way you want them done and cook tortellini according to package directions. Drain and keep warm. Meanwhile, heat oil in large skillet over medium heat until hot. Add onion and garlic; cook until tender and lightly browned, about four minutes. Add spinach, tomato, basil, salt, pepper and crushed red pepper; cook five minutes, stirring occasionally. Stir in whipping cream and Parmesan cheese; cook until mixture just comes to a boil. Reduce heat to low stir in tortellini and chicken slices. Cook and additional 4-5 min.. Serve with additional Parmesan Cheese on top.
