4 eggs, separated
1 c. sugar
1 c. cake flour
1/2 tsp. baking powder
1/2 tsp. lemon extract
1 T. boiling water

Directions:
Directions:
Beat egg whites. Let sit. Beat egg yolks until light and fluffy. Beat sugar in gradually. Fold in egg whites with wire whisk. Mix flour and baking powder together and add. Add lemon extract and boiling water. Stir and put in jelly roll pan (10" by 15") lined with wax paper. Bake at 375 to 10 min. Drop onto a towel which has been sprinkled with water and powdered sugar. Trim long edges of cake. Roll and then unroll. Spread jelly. Roll tightly. Cool wrapped in towel. Refrigerate when cool.
