Ingredients: 1 c. butter (2 sticks) 1/4 c. unsweetened cocoa powder 1 c. water 2 c. sugar 2 c. flour 1 tsp. soda 1 tsp. cinnamon 1/2 c. buttermilk or sour milk* 2 eggs 1 tsp vanilla Quick Cocoa Frosting** chopped nuts optional

Directions:In a medium saucepan, combine butter, cocoa and water; bring to a boil over medium heat cooking until butter is melted and set aside. In a large bowl stir together sugar, flour, soda and cinnamon. Add cocoa mixture and blend. Beat together buttermilk and eggs; stir into batter. Add vanilla. Pour into un-greased 9x13x2 pan. Bake at 400º for 20 minutes. Five minutes before cake is done make the frosting. Frost while cake is still hot. |

Notes: * To make sour milk, measure 1/2 tablespoon of vinegar into a measuring cup, adding enough milk to make 1/2 cup. Let stand for 5 minutes.
** Quick Cocoa Frosting In medium saucepan combine 1/2 cup butter, 1/4 cup cocoa powder and 1/3 cup of milk. Bring to a boil and simmer for 3 minutes. Remove from heat and stir in 1 pound of powdered sugar and 1 tsp. vanilla. Beat until smooth.
