2 Large peeled Egg plants sliced 1/2 in. thick
2 Red bell peppers cut in half and seeded
2 Yellow bell peppers cut in half and seeded
2 cans of plain artichoks ( drained )
2 Large white onions sliced thin
1/4 c. olive oil
1 T Black pepper
2 T. Salt
1 Large round loaf of sourdough
1 cube of Cream cheese (room tremprature )
1/2 Lb. Italian dry salami very thinly sliced
1 Bottle Creamy Italian salad dressing
1 Head green leaf lettuce rinsed and dried
1/2 Lb. Thinly sliced provolone cheese

Pre heat oven to 350
On a well oiled cookie sheet place egg plant, peppers, artichokes, onions. Season with salt and black pepper, drizzle with olive oil . Place in oven and bake for 30 min.
Let veggies cool for 30 min. then peel the skin off of the peppers.
Place all veggies into a baking dish and pour the whole bottle of Italian dressing over them. Let them marinate overnight in the fridge.
The next day slice your sourdough loaf in half like a hamburger bun. Spread the cream cheese on both sides of the loaf. then begin layering the vegies on top of the cream cheese. Then place the green leaf lettuce on the next layer. Top with the salami and thinly sliced provolone cheese. Put the top of the sourdough back on the top of the sandwich , wrap tightly in plastic wrap and place a heavy iron skillet or pan on top and let it set at room temp. for 1-2 hours. Serve at room temp.
