1 c. sugar
1 c. dates
1 c. water
1/2 c. apricot jam or spreadable fruit
1-3/4 c. oatmeal
1-1/2 c. flour
1 c. coconut
1 c. brown sugar
1 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
3/4 c. margarine

Directions:
Directions:
Combine dates, sugar and water in saucepan and bring to a boil. Simmer, stirring occasionally, until mixture forms a paste, about 35 minutes. Be careful not to overcook. Add jam and mix well. Meanwhile, to prepare crust, combine remaining dry ingredients and cut in margarine. Press half of crust mixture into bottom of 13x9 pan sprayed with nonstick cooking spray. Pour date mixture over crust and spread almost to edges of pan. Top with remaining crust mixture and press down lightly. Bake at 350 F for 25-40 minutes or until golden brown. Cool and cut into squares.

This is one of those recipes that just kept evolving until I got it right. The coconut is what makes it great.
