2 cloves garlic, minced
2 eggs, beaten
2 tablespoons oil
2-4 cups cooked rice
1/2 cup diced ham
2 tablespoons soy sauce
1 cup frozen peas and carrots
Salt
1/4 sliced green onions

In a wok or large frying pan, cook garlic in oil for one minute on medium-high heat. Add ham, peas, and carrots. Cook until heated through. Add green onion, stir. Clear a hole in the center of the pan and pour in the eggs. Cook until done. Add 2-4 cups of rice depending on how concentrated you like the ham, veggie, and egg mixture. Season with soy sauce, add more if desired. Add salt and pepper to taste. Cook until rice is heated through.

I like to pair this with potstickers or eggrolls. Frozen potstickers cook in about the same amount of time as the rice. I make this when we have rice from another meal and I have some leftover ham frozen from a big Sunday dinner. It's a great use of leftovers.
