1 pound smoked sausage, sliced 1/8" thick
1 15-ounce can diced tomatoes, with liquid
4-6 skinless chicken thighs, whole
1 8-ounce can tomato sauce
1/2 cup cubed ham (smoked)
2 cups rice
3 tablespoons butter
Cracked black pepper to taste
1 medium onion, diced
2-3 bay leaves
1 large green bell pepper, diced
1/2 teaspoon Tabasco
2-3 stalks celery, sliced
1 tablespoon Tony Chacheres
4 cups chicken broth
Creole Seasoning

Directions:
In a deep, large electric skillet, saute sausage, chicken, and chopped ham in butter. Add onion, pepper, and celery. Saute until onion and celery are clear. Deglaze the pan with chicken broth. Add tomatoes and tomato sauce. Bring to a boil, then stir in rice and remaining ingredients. Cover and cook until rice is done, approximately 20 minutes. Debone the chicken thighs. Serve with Tabasco and Chacheres seasoning to taste.
