Apple Cake Recipe

1 3/4 c sugar
1 c canola oil
3 eggs
1 tsp vanilla
2 c all purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
4 or 5 peeled and sliced apples
1 c chopped walnuts (optional)
2 tsp. lemon juice
1/2 c icing sugar

Stir together first four ingredients with a spoon until well mixed. Mix together next four ingredients and add to sugar/oil mixture. Add apples and nuts to batter. Put in greased/floured 9 X 13 pan and bake at 350 for 45 to 50 minutes. Mix lemon juice and icing sugar together to make glaze. Drizzle on top of warm cake.
