2 tablespoons chili powder
1 1/2 teaspoons pepper
1 teaspoon crushed bay leaves
4 pound brisket
1 1/2 teaspoons salt
2 tablespoons liquid smoke

Directions:
Directions:
Combine spices in a small bowl. Place brisket in roaster pan, fat side up. Coat meat with liquid smoke over the fat side and sprinkle spices over the top. If cooking a smaller brisket, wrap in foil.

Bake at 325° for five hours with the lid on (300°for smaller brisket). When done, scrape fat and seasonings off with spatula and slice across the grain. Serve with warm BBQ sauce.
