1 tbsp. oil
4 boneless chicken breast halves (skinless)
1 (10.5 oz.) can chicken broth
1/2 c. water
1 c. fresh mushrooms (sliced)
1 sm. onion (chopped)
1 c. frozen peas
2 c. Brown Minute rice (uncooked)

Directions:
Directions:
Heat oil in skillet. Add chicken, cook until browned. Remove chicken. Add chicken broth and water, stir and bring to a boil. Stir in mushroom, onions, peas and rice. Top with chicken and cover. Cook on low heat for 5 minutes or until chicken is cooked through. Let stand 5 minutes to cool. Serve warm.
