4 cups light olive oil or vegetable oil (Canola recommended)
1 3/4 cups all purpose flour
Pinch cayene pepper
1 tsp. kosher salt
2 lbs. whole squid, well washed, dried and the bodies cut into ringlets, the tentacles halved or quartered

Directions:
In a heavy bottomed pan, heat the oil to 360 degrees. On a large plate, combine the flour, cayenne, and salt. A batch at a time, toss the squid in the mixture and coat well. Place the squid in a colander and shake to remove excess coating. Work in batches, drop the squid into the hot oil. Don't crowd the pan. Using a slotted spoon, turn once or twice. Fry until golden brown, about 2 minutes. Drain on paper towels, keeping the squid warm until all the frying is completed. Serve hot with lemon wedges.
