Pastry for single crust pie
3 slightly beaten eggs
1 c. packed brown sugar
1/2 c. dark corn syrup
1/2 c. evaporated milk
1/2 c. quick-cooking oats
1/2 c. coarsely chopped walnuts
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 350º. In large mixing bowl, combine eggs, sugar, syrup, milk, oats, nuts, butter, vanilla, & 1/8 tsp. salt; mix well. Line a 9" pie plate with pastry; trim and flute edge. Place pie plate on oven rack; pour in filling. Cover edge with foil. Bake at 350º for 25 minutes. Remove foil. Bake 25 minutes more or until top is golden brown & a bit puffy. Filling should stll be a bit soft; it will firm up as it cools. Cool completely.
